This is one of my favortie cookbooks. The meals are simple and quick to prepare, but as delicious as almost any similar meal I've ordered at a restaurant. I also love that you prep as you go along, rather than having to prep before beginning the recipe. Only one caveat - I think that the author's calorie counts are off on a few of the recipes.
Great mix of vegetarian recipes. Not your boring cookbook! Even has variety menu ideas for various settings: fall luncheon, Asian dinner, Pasta picnic, ect... Sections include: The basics, Appetizers, Soups, Salads, Entrees, Desserts, The vegetarian entertainer, and How to Plan a Vegetarian Meal.
It's an older book, but still has some good recipes, and adds to my collection.
