I printed postage for something that weighed less then 6 oz as first class mail. But after a put the tape on the envelope of the book, I dropped it back on the scale just because the space was available. I then noticed it was reading over 7 oz. So I stuck a couple stamps on it to cover the higher cost. Is that allowable?

yep its good to  go and you can still drop into a blue mailbox (you dont have to take to the post office)

I commend your honesty, but I don't think the P O has the personnel to re-weigh packages to see if they might be slightly heavier?

I think they get checked at their sorting facilities, I assume the process is mostly automated. I've had several small books arrive postage due because they were sent first class and were off by an ounce.

The book made it to its destination fine. I'm glad.
