This is a great book. Recipes from most African countries, and many are vegetarian (or potentially so if you're inventive with tempeh and tofu). They may have lots of ingredients, but they're pretty easy to follow. I've had some wonderful dinner parties as a result. The Mafe is quite amazing.

Nice, varied collection of authentic African recipes. Book has some lovely illustrations and includes recipes for meat, fish, and vegetarian recipes. Most recipes have easily-obtainable ingredients.
