I'm not a magician, just a home-cook who has spent hours in her kitchen experimenting with ways to substitute ingredients, and to cut back on that which is harmful. My goal was to come up with an assortment of Shabbos and weekday meals that taste pretty darn good, are easy enough to make, are made with kosher ingredients that are easily found in most major supermarkets, are affordable, and are reduced in carbs, fat, and/or calories from the original recipe.
