My niece just moved into her first apartment without a roommate and has asked for help in finding cookbooks with portions designed to feed one or two people. She already has a classic Betty Crocker cookbook, but she's getting frustrated trying to either guesstimate how to scale down the recipes to fewer servings or get stuck eating the same 8 dishes over and over again until there's room in the freezer for something other than the leftovers, LOL.
I've already picked her up Where's Mom Now That I Need Here? and the Rachael Ray cookbook with servings for 2,4,6, and 8, but I'd like to help find a few more that are specifically for cooking for one or two people (not just your run-of-the-mill cookbooks, if that makes sense). I thought I'd try boardies first. Deals, although appreciated, aren't necessary. :)

Great! Thanks to Maria, I've got one cookbook on order. Please keep 'em coming! I'd love to find a few more still and they do not need to necessarily be the titles listed as long as they are designed for one or two people.
