Artichoke Pizza (Good!)

1 - prebaked pizza shell
2 jars - marinated artichokes
1 tsp. - Italian seasoning
1 cup - petite diced tomatoes from can, drained
1-2 cups - shredded mozzarella or colby/jack cheese
Preheat oven to 400 degrees.
Drain artichokes, preserving liquid. With a basting brush, brush 1 T. preserved artichoke liquid over pizza. Chop artichokes into smaller pieces; arrange evenly over pizza crust. Top with chopped tomato and Italian seasoning. Sprinkle cheese over top.
You may add sliced black or green olives, diced chicken or turkey, or substitute any kind of cheese to your liking. For added zip add red pepper flakes!
Bake for 10-15 minutes or until cheese is melted and crust is lightly browned.
My husband and I love this for a quick lunch!
