Ingredients
  • 1/2 cup - onion, chopped
  • 2 cups - asparagus, chopped
  • 1 Tbsp - butter
  • 1 Tbsp - all-purpose flour
  • 1/2 cup - shredded Swiss cheese
  • 1 - tomato, chopped
  • 1 - 9-inch pie crust, baked
  • 6 - eggs
  • 1 cup - half-and-half
  • 1/2 tsp - dried basil
  • 1/2 tsp - salt
  • 1/8 tsp - pepper
Directions

In a large skillet over medium heat, sauté onion and asparagus in butter until tender, about 5 minutes. Sprinkle with flour; stir in cheese and tomato. Pour into pie crust and set aside. Whisk together remaining ingredients until well blended; pour evenly over top. Bake at 375 degrees for 30 to 35 minutes. Let stand 5 minutes; cut into wedges.
