Ingredients
  • 1 CUP - SOLID SHORTENING
  • 1/2 CUP - MARGARINE, SOFTENED
  • 3 CUPS - WHITE SUGAR
  • 5 LARGE - EGGS
  • 3 EACH - RIPE BANANAS
  • 3 TABLESPOONS - MILK
  • 2 TEASPOONS - VANILLA
  • 3 CUPS - ALL PURPOSE FLOUR
  • 1/2 TEASPOON - SALT
  • 1 TEASPOON - BAKING POWDER
Directions

Beat shortening and oleo at medium speed about 2 minutes or until creamy. 

Gradually add sugar, beating 5 to 7 minutes.

Add eggs one at a time beating just until yellow disappears.

Combine mashed bananas, milk and vanilla. 

Combine flour, salt and powder. Add to shortening mixture alternately with banana mixture, beginning and ending with flour mixture. Beat just until blended after each addition. 

Pour batter into a greased and floured 10-inch tube pan. Bake at 350* for 1 hour and 20 minutes. 

Cool in pan on rack for 10 minutes.
