Ingredients
  • Cup 4 - water
  • Cube 3 - beef bullion
  • Cup 1/3 - brown rice
  • Cup 1/3 - barley
  • Stalk 1 - celery, diced
  • Cup 1/4 - onion, diced
  • Clove 2 - 3 - garlic, thinly sliced
  • Teaspoon 1/4 - dry basil leaves
  • Teaspoon 1/4 - dry oregano leaves
  • Each 12 - peppercorns
  • Each 1 - bay leaf
  • Ounces 8 - firm tofu, diced
  • Cup 1/2 - sliced fresh carrots or other vegetable
  • Cup 1/2 - chopped fresh brocolli or other vegetable
  • Cup 1/2 - diced fresh zucchini or other vegetable
Directions

Put water in medium covered pot

Add bullion, rice, barley, celery, onion, garlic, herbs, bay leaf, and peppercorns

Bring to boil on stove top, stir, then reduce heat to simmer and cover pot

Cook for 25 minutes, stir periodically, then add remaining ingredients

Bring to boil again, then reduce heat to simmer and cover pot

Cook for 20 more minutes (45 minutes total), stir periodically, or until rice and barley are tender

Salt and pepper to taste, dispose of bay leaf


Notes

The BF in the name stands for Bottom of the Fridge -- whatever is on hand. I make a pot of this weekly and make a meal of it with stoned wheat crackers. Enjoy!
