Title:

Bipartisan Veggieburgers

Dish: Burgers
Dish Type: Grains
Cooking Method: Stove Top
Diet: Vegetarian
Difficulty: 3 / 10
Servings: 6
Prep Time: 20 minutes
Cook Time: 10 minutes

Ingredients
  • 1/2 cup - dry bulgur wheat
  • 1 cup - hot water
  • 1/2 cup - black beans, mashed
  • 1/4 cup - bread crumbs
  • 1 tblsp - dried basil
  • 1 tsp - sea salt
  • 1/4 cup - diced onion
  • 1/4 cup - diced red pepper
  • 1 clove - garlic, minced
  • 1 tbsp - olive oil
  • 1 - egg
  • 1/4 cup - low fat mozzarella, shredded
Directions

These are "bipartisan" because even my household meat-eaters like them!

Add the 1/2 cup dry bulgur to one cup hot water. Let sit 15 minutes until all the water has been absorbed. Fluff with fork. Saute onion, red pepper and minced garlic in olive oil; add to bulgur in medium bowl. Add rest of ingredients and mix well until the mixtures holds together. If it is too dry, add a few drops of water and keep mixing until it all holds together. If it is too wet, add more breadcrumbs until you get to the right consistency. Shape into burgers and fry in a little olive oil until golden brown on both sides. You can season as you cook them with a sprinkle or two of Bragg's Organic Sprinkle seasoning. Serve with whatever condiments your folks are into. Very mild, basic veggie burger and much better than store-bought/frozen ones!

Looks delicious! THanks! I'll try it tomorrow. Sounds like a fun recipe to bring a little summer to a dreary winter day.
