I bought this book when I was in hospitality school; it served me well. Good for someone who wants to learn to do simple garnishes done without lots of fuss.

One amazon reviewer:
This book is full of simple little ideas for sprucing up any dish. None of the garnishes are very difficult, but they contribute so much to the eye appeal of any meal, and subconsciously, they contribute to the taste. (If it looks good, your mind subconsciously tells you it is good.) I would definitely recommend this for anyone who wants to add just a little flair to their meals, but doesn't want to have to learn any fancy knife cuts or buy any special equipment/blades.

This book is not full of watermelon viking boats or potato sculptures of famous figures.
It's a great book for people who cook delicious food and want a garnish that adds a nice touch, not something gimmicky or distracting. A great many of the garnishes are shaped from a single fruit or vegetable, but there are a few more complex creations (particularly for desserts).

Every garnish is illustrated with four color photographs: A photo of the finished garnish, and three photo-illustrated steps to create the garnish. Garnishes are categorized as savory, sweet or fruit. There are suggestions for what types of food each garnish is suitable for (based on flavor). This book will show you how to make simple and elegant garnishes out of lemons, chilis, avocados, radishes, leeks, carrots, cucumbers, tomatoes, potatos, beets, egg, pea pods, daikon, lobster, squid, zucchini, mushrooms, turnips, shrimp, pickled ginger, bell peppers, green onion, lotus root, pineapple, pears, grapes, guava, melon, lime, apples, oranges, chocolate, flower petals, and more.

This is a great gift book for your favorite cook, a simple way to dress up a meal for company, or your teenager can help you in the kitchen by making some of these simple and beautiful garnishes to dress up your everyday meals.
