I received my first book today (hooray!) and it automatically was listed on my profile as the book I'm currently reading. Is there some way to change my settings so this doesn't happen with every book I receive?

If you don't choose those settings manually (under My Account > My Profile > Edit), then it will use recent arrivals by default.  There's no way to stop it entirely.

I think if you open Settings and scroll down, you can make those areas "private" which will prevent the books from being seen. Or you can enter other books to take up the spots and delete the book showing by getting into your profile maintenance.
