The instructions are geared for use with charcoal briquettes since there are apparently fewer and fewer places where an open fire can be used. Since I'm fortunate to live in one of those places where I can use an open fire, I'll have to figure out how many fire embers will replace the recommended number of briquettes per recipe. Still, it's a good little basic primer.
