This is a wonderfully moist cake! Enjoy.
 
2 c. flour
2 c. sugar
2 tsp. cinnamon
2 tsp. soda
1 ½ tsp. salt
1 ½ c. Crisco oil
4 eggs
3 c. grated carrots
 
Cream together sugar and oil. Add eggs one at a time. Add dry ingredients. Add carrots. Grease and flour a 9 x 13 pan. Bake at 350 degrees for 40-45 minutes.
 
Frosting:
 
1 (3 oz.) pkg. cream cheese
1 ¾ cup powdered sugar
¼ cup butter
1 tsp. vanilla

Notes

 

 

When I made it the 2nd time it really puffed up in the center but came back down while cooling, so don’t worry about that. It made me think I had to bake it another 5 minutes but I’m not sure I had to. Enjoy!
