Post your recipes that contain celery as one of the main ingredients here!


I'll start.

I cut this recipe out of Family Circle magazine; haven't tried it yet, but plan to soon, since it sounds great.  DH loves celery but is not too enthusiastic about salads, usually, so I'm hoping he'll take to this one.  We need to eat more vegetables.


Celery and Olive Salad

2 cups chopped celery, including leaves

1/2 cup chopped pitted green olives

2 tablespoons olive oil

2 tablespoons white wine vinegar

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

In a medium-sized glass or plastic bowl, stir together all ingredients until well combined.  Cover and regrigerate for at least 4 hours or as long as overnight.  Serve as an accompaniment to fish or meat.  Makes 2 and 1/2 cups.

This isn't really a recipe, but we like to take these spreads and fill up the celery with them:

Old English

Peanut Butter of course

Cream Cheese

Sour Cream based dip ( Ranch, green chili etc. )

I have seen recipes for braised celery that people swore was delicious. So I tried it, and it just tasted like wet, warm  celery....I think I'll stick with raw for dips from now on!

Some old folks at our church make jello with celery in it. But it looks kinda gross.

Does anyone have a recipe for celery mandarin soup?  This one restaurant near me has it, but I love to be able to make it at home.
