Ingredients
  • 2 Jars - marinated artichoke hearts, drained, chopped
  • 1 Lg - Green bell pepper, chopped
  • 1 Med - Onion, chopped
  • 1 Sm Jar - Pimento, diced
  • 1 8 oz can - Water chestnuts, chopped
  • 2 Cloves - Garlic, crushed
  • 1 8 oz - Monterey pepperjack cheese, shredded
  • 1 lb - Extra sharp cheddar cheese, shredded
  • 4 Lg - Eggs, beaten
  • 1/4 Cup - Italian bread crumbs
Directions

Mix all ingredients together except eggs & brad crumbs.  Mix eggs & bread crumbs together, then fold into the rest.  Bake in 13 x 9 baking pan, 45 minutes @ 375.  Recommended you use non-sticking cooking spray on pan.


Notes

Recipe can be doubled.  If more spce desired increase pepperjack cheese to 1 lb for a single batch

Can be made ahead and refrigerated until ready to bake

Great cold and also as appetizers  hot or cold cut into squares. 

Can be used as side or main dish.
