City ham

1 brined ham, hock end

1/4 cup brown mustard

2 cups crushed gingersnaps cookies

score ham, cover with foil and cook three to four hours 130 degrees

brush mustard, sprinkle with brown sugar, spritz with water and pack on cookies

140 degrees

cook for one hour

rest for 1/2 hour.
