Sear chicken breasts (or pork loin) in olive oil to seal in juices, about 2 minutes per side. Place chicken in baking dish. (I use a 4” deep casserole dish.) Spread diced chilies over chicken. Combine black pepper and whipping cream, then pour over chicken and chilies. (Cream should almost cover chicken.) Spread Swiss cheese evenly over everything. You can use more or less cheese, depending on taste. Bake at 350o F for 45 minutes, or until cheese is lightly browned. Serve over cooked rice.
