Easy Shepherd’s Pie

Ingredients
  • 1½ lb. - ground chuck
  • 1 c. - frozen chopped onion
  • 2 Tbsp. - cornstarch
  • 1 pkg. - Lipton Onion-Mushroom soup mix
  • 1/8 tsp. - rosemary leaves
  • 3 generous dashes - Worcestershire sauce
  • 14½ oz. can - peel diced tomatoes, chopped
  • 1 can - beef broth OR 1¼ c. water
  • 1 c. - frozen peas
  • 5 c. - Leftover mashed potatoes, approx. –OR–
  • 1 8 oz. pkg. - Idahoan Original Mashed Potatoes, prepared according to package directions –OR–
  • 1 pkg. - Oreida frozen mashed potatoesaccording to package directions
  • ½ c. - grated cheddar cheese (more or less)
Directions
Brown beef with onions; drain fat. Add cornstarch, soup mix, and rosemary; stir well.  Add Worchestershire sauce, tomatoes amd beef broth.  Heat until the mixture thickens. Add peas.  Pour into greased 3-qt. casserole.
Add a layer of grated cheddar cheese.
Prepare potatoes, if necessary.  Spread mashed potatoes over meat filling in casserole. 
Bake covered at 350°for 40 minutes or until bubbly. Let stand 5 minutes before serving.
TIME-SAVER: Make a double batch of meat filling in advance and freeze half for a quick meal another time.

sounds good...I'm going to the grocery store to get most of the ingrediants. I think we'll have it tonight for dinner. I'll let you know how my family likes it:) Nancy
