Emeril's nod to the locavore movement. If you like Emeril, you'll probably find a few good recipes. If you're not an Emeril fan, there's nothing special here.

He does the usual "eat local" with a couple of recipes for pickles and jams at the end. His sauerkraut recipe is a lacto-ferment but his dill pickles are conventional vinegar brine.
