I've noticed that for books in my Reminder List I can see how many copies are available. Is there any way to see Copies Available for other books without having to first put them on my Reminder List?

Not that I'm aware of, though it seems like it would be helpful at least by avoding the inconvenience of adding and removing books just to get that particular bit of information.  You could use the Contact Us button and send a message suggesting they add that information to the book listing.

If the book is a wish list book you can see how many members are wanting it on the book details page.  For available books, I'm pretty sure the only way to is add it to your Reminder list. 

That's the way I do it anyway...
