Grandma's Apple Pie

1 1/2 lbs. short crust pastry, recipe follows

7 cups royal gala apples, cored and quartered about five apples

1/2 cup sugar

1 talb. lemon juice

2 tsp. lemon zest, finely chopped

1/4 tsp. grated nutmeg

pinch salt

2 talb. water

2 talb. unsalted butter, cold

oven 375

roll 1/2 the crust pastry to 1/4 inch thickness and cut out circle

line a pie plate

meanwhile cut the apples into slices. toss the apples with sugar, lemon juice, zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. brush pastry.

arrange apples in pie shell dab with butter slide lattice top over apples press. brush with egg wash

place on sheet and bake for one hour and 15 min.

Short crust pastry:

3 cups flour

1/4 tsp. salt

4oz. unsalted butter, cold

8oz. shortening, cold

1/2 cup ice cold water

sift the flour and salt in bowl. grate the butter and shortening into the flour. combine the mix  with fingers. add ice cold water and mix.

 

Note:

I used a two crust pie usually.
