Artisan Bread in Five Minutes presented European-inspired loafs and baked goods, relying on traditional baking ingredients. After the authors started a blog based on that book, they responded to readers requests for recipes for healthy breads, including those made with less white flour, lower refined sugars and gluten-free options.
I love this book. I make the master recipe form it about once a week so I always have homemade bread around for the kids. It is well explained and easy to use. My only tiny gripe is that they give the weights (as well as the volume) for measuring ingredients for the master recipe, but not for all the recipes in the book. I prefer measure by weighing, but most people won't find this to be an issue.
