Jean-Marie Gallois, the hero of this novel, is a young sauce-stirrer who aspires to win his high bonnet, the towering white toque that is the mark of achievement of every top chef. This is the story of his many adventures. An intro by Anthony Bourdain.

An intriguing, poetic ode to the art of cooking and eating written by a noted Gordon Bleu chef and author of the 1st half of the 20th century. This book is a classic - I'm glad they've reprinted it.
