Ingredients
  • 2 1/2 cups - flour
  • 8 - eggs
  • 2 1/2 cups - water
Directions

Mix all together in a blender to keep fresh and airy.  I think that is the real secret that they melt in your mouth.

You fry slightly in an 8inch (cast iron) frying pan .  I flip only once.  They look like pasta pancakes.   Lay them on a table till you are finished with the whole batch.   You will fill these with your cheese filling.  These are certainly not for anybody with a cholesterol problem!!

The cheese filling is a 5 pound tub of ricotta cheese.  To this -you add 2 eggs for every pound of cheese, salt and pepper, parsley, (parmesan cheese if you want.)  The ideal way is to fill each pancake with your cheese mixture, roll them up and place in a flat pan or raised cookie sheet.  That is ideal...but, I have to use a oven roaster pan, then you put on your favorite sauce.

Bake about an hour at 350 degrees.
