This is a good introduction to the scientific rationale behind low-carbohydrate diets. The major flaw in the book -- and it's a big one, IMO -- is that the authors don't distinguish between carbohydrates from whole, fresh foods (e.g., baked potatoes, unheated honey, or bread made of freshly stone-ground flour), vs. the ones that are found in packaged foods. Still, the research does give strong evidence of the dangers of the typical American diet, in which the vast majority of the carbohydrate foods are overly processed for commercial reasons.
