I'm usually pretty good at finding things by poking around...I looked on fantasticfiction.com, and found a book titled Jenny by Patricia Phillips, published in 1981.  It's available here on PBS, but I couldn't find a description anywhere, or any other book with that exact title.

I googled ' "hit by a car" cat jenny' and came up with this:

Jennie by Paul Gallico.

Looks like you had the right name, but the wrong spelling.  Sometimes, it's all about phrasing the search exactly right.  Also, it looks like it was published with a different title in the US.

To find books, I generally like this site.  They're pretty good at finding things.

I found a description for Patricia Phillips' novel:

Bawdy Restoration England was no place for a chestnut-haired beauty like Jenny Dunn. Raised in country innocence, but forced to flee to London, Jenny found protection where she could -- with Manuel, the Gypsy who defied the laws of his tribe to possess the forbidden temptress ... with a mysterious imposter, a royal rake who could not resist glorious Jenny, but could not be faithful to any woman.

But Jenny's true, unshakable love was for Kit Ashford, sea captain and nobleman, who stole her heart, and then returned to claim it -- only to find Jenny now beyond his reach, the mistress of his sovereign!

Doesn't seem likely to be it.
