I'm trying to go meatless, dairyless and eggless a couple days a week.  I have several very good tofu recipes and looking for more!  Any suggestions?

Anna,  There is a tofu cookbook that I've enjoyed a lot called "I Can't Believe It's Tofu!"  I would offer to post some recipes, but I am in the process of moving and all my cookbooks are in boxes!

Wow, what a timely thread, Anna.  I, too, am just starting out in tofu and would love some advice and recipes from "old-timers."

Vegan Pumpkin Pie

1 can (15 oz) pumpkin

3/4 cup sugar

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon ginger

1/4 teaspoon ground cloves

1 teaspoon ground allspice

1/2 teaspoon nutmeg

2 to 3 tablespoons cornstarch

1 packages (12 oz) silken, firm tofu, cubed

1 unbaked vegan pie shell (9 inches)

Preheat oven to 425 degrees. Blend the pumpkin and sugar. Add salt, spices and cornstarch. Add tofu and mix thoroughly, using electric mixer or blender if necessary. Pour mixture into pie shell. Bake 15 minutes.  Lower oven temperature to 350 degrees. Bake 1 hour. Chill and serve.
