Mama's Italian Cookbook Author:Various "Welcome to Mama's Italian Cookbook - not only a collection of recipes from my own kitchen, but a scrapbook of family wisdom and a little insight into my life. For me, there is no distinction between cooking and the cook: the feelings, the passion, the love, and the experiences of the person making the food all go into the food - and so the cook... more » becomes a part of the recipe. All of which means to understand my food is to understand me.
So let me tell you about myself. People call me Mama. I'm the head of a large, noisy, happy household here in a small village in Apulia, a region in the south of Italy. I've been married to Alberto for 56 years and together we have 6 children, 22 grandchildren and 8 great-grandchildren. I've lived in this village all of my life - and my Mama, her Mama, and her Mama before her, all did the same. Tradition is everything here.
And nowhere is tradition more clearly seen than in the kitchen. Learning how to feed a family is a skill and a passion that is passed down the generations; and it is a source of pride with me that, even in the hardest times, i have always put beautiful, healthy food on my table - and my family have grown strong and beautiful themselves as a result.
Good food needn't be complicated: simple dishes put together with care and love can be the match of the most decorated chefs in the ristoranti of Roma and Milano. In Mama's kitchen we have just one test: if four generations of the same family can sit down and enjoy a meal together, if eery plate is wiped clean and every stomach satisfied, then Mama has done her job well.
Most cookbooks are written like textbooks - reading them is like listening to cooking teachers. This one is different. This is Mama's cookbook. And we have a saying in Apulia: "Una buona mamma vale cento maestre" (a good mother is worth a hundred teachers)."« less
