Chicken breast 2 - Chicken breasts or tins of canned chicken
3/4 c - Pineapple tidbits, drained
3/4 c - Pecans, chopped but not tiny (can buy already chopped or chop it yourself)
1/2-3/4 c - Mayonnaise (I use light)
3/4 tsp - Curry powder
If you are using canned chicken, drain.
If you are using chicken breasts, boil them to cook (maybe 10-15 minutes on boil), then put the breasts in the fridge or freezer to cool them. Then process the breasts into small chunks using a food processor or a fork to flake them.
Mix the mayonnaise and the curry powder. Then combine all ingredients, making sure the chicken is coated.
This recipe is really better after it sits in the fridge for a couple of hours, but it's good right away too.
