Quickie Caramel Custard

Flan-flavored Fage? AMAZING!

Ingredients:
One 5.3-oz. container Fage Total 0% Greek Yogurt
1 tbsp. Splenda No Calorie Sweetener (granulated)
1 1/2 tsp. Torani Sugar Free Caramel Syrup
1/4 tsp. cinnamon

Directions:
Mix all ingredients together and serve with your favorite spoon!

MAKES 1 SERVING

Tiramisu Pudding

Face it -- ladyfingers are overrated. Here's a creamy, cocoa-dusted dream come true!

Ingredients:
1/2 cup fat-free ricotta cheese
1/2 container Jell-O Sugar Free Vanilla Pudding Snack
1/4 cup Cool Whip Free, thawed
2 tbsp. Splenda No Calorie Sweetener (granulated)
1/4 tsp. vanilla extract
1/4 tsp. unsweetened cocoa powder

Directions:
Combine the ricotta cheese, pudding, Cool Whip, Splenda, and vanilla extract. Stir until smooth. Sprinkle with cocoa powder. Dig in!

MAKES 1 SERVING

Coconut Pecan Blondie Mix

  • 1/4 cup flour
  • 1/4 cup brown sugar, packed
  • 1-1/2 tablespoons sweetened flaked coconut, firmly packed
  • 1 tablespoon finely chopped pecans
  • 1 teaspoon egg white powder
  • 1/4 teaspoon vanilla powder (optional)
  • 1/8 teaspoon baking powder
  • Dash of salt
  1. Blend ingredients together.
  2. Microwave 1-1/2 tablespoons butter or margarine in mug until melted.
  3. Empty cookie mix into mug and add 1-1/2 tablespoons water; stirring with a fork until blended.
  4. Microwave on 60% power for 2 minutes.
  5. Let stand in the microwave 2 minutes.
  6. Remove from oven and let stand until cool enough to eat.

Butterscotch Pudding mix (use an extra large mug, or it could boil over)

  • 1/4 cup butterscotch baking chips
  • 3 tbsp instant non-fat dry milk
  • 2 tsp brown sugar, firmly packed
  • 2 tsp cornstarch
  • 1/8 tsp vanilla powder or vanilla extract (optional)
  • dash of salt
  1. Blend all ingredients together in a large mug (16 ounces.)
  2. Add 1/2 cup water.
  3.  Stir to blend well.
  4. (You must check microwave in 30 second increments! Stir & check every 30 seconds) Microwave on high power for approx. a total of 2 minutes, or until the pudding is boiling and slightly thickened. (Again--it should be approx. 2 min. total microwave time, but cook in 30 sec. increments, checking & stirring every 30 secs.)  
  5. Do not let pudding boil over the top of the mug! While boiling, if it approaches the top of the mug, stop the microwave and let it cool down for 15 seconds before resuming "baking."
  6. After 2 minutes of cooking (or until pudding is thickened) allow pudding to stand until cool enough to consume. Delicious warm or cool. Add whip-cream to taste.

Pineapple Upside Down Cake

Cake "batter":

  • 1/4 cup flour
  • 3 tbsp granulated sugar
  • 1 tbsp instant non-fat dry milk
  • 1 teaspoon egg white powder
  • 1/4 teaspoon baking powder
  • dash of salt
Topping: (measure ingredients, then combine thoroughly for even flavoring)
  • 2 teaspoons brown sugar, packed
  • 1/8 teaspoon cinnamon
Additional:
  • 1(4oz) snack size package of pineapple bits
  • 1.5 tablespoons butter or margarine
  • 3 tablespoons water
Instructions:
  1. Melt 1.5 tbsp butter/margarine in mug until melted.
  2. Add cake "batter" ingredients and 3 tbsp water to mug, then stir with a fork until well blended.
  3. Drain juice from pineapple.
  4. Stir 1 tbsp pineapple to batter. (You can "crush" the pineapple with a fork before adding it to the batter.)
  5. Add 2 tbsp pineapple in a single layer to top of batter. (You can discard extra pineapple, snack on extra while you wait for cake to be done, or add the extra to the final, heated cake, if you like a lot of pineapple.)
  6. Sprinkle with topping mix.
  7. Microwave on 60% power for 2.5 minutes.
  8. Let stand and cool for 2 minutes.
  9. Enjoy!

Rice Crispy Treats
1/4 cup mini marshmallows
1 tbsp peanut butter baking chips
1/3 cup Rice Crispy cereal
1/2 tbsp butter or margarine

Microwave 1/2 tablespoon butter or margarine in a mug until melted.
Add 1/4 cup marshmallows and 1 tbsp peanut butter chips.
Microwave on high for 15 to 20 seconds, until ingredients just begin to melt.
Stir mixture until smooth and well blended.
Add Rice Crispy cereal and stir until cereal is evenly coated.
Enjoy!

S'mores in the microwave

1/2 cup graham crackers (coarsely crushed)
1/2 cup mini-marshmallows
1/4 cup chocolate chips (semi-sweet or milk chocolate)

Blend all ingredients.  Put in microwave safe mug, microwave on high power approx. 30-45 seconds, or until marshmallows are puffed. Let stand for 2 minutes to allow the chocolate chips to melt. (The "carry-over" heat will melt the choco chips.) Enjoy!

Lemon Glaze Cake

Note:  This recipe makes eight servings, which can be made in advance, portioned and "baked" as needed.

Ingredients:

  • 1 (18.5 ounce) package yellow cake mix
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 2-2/3 cups confectioners' sugar
  • 1/4 cup powdered lemonade mix

Preparation:

Each coffee mug should hold 1-1/2 cups water.

Cake Mix: Place dry cake mix and dry pudding mix into a large bowl and blend well with a whisk. This will be about 4 to 4 1/2 cups of dry mix and will make 8 coffee cup cake mixes. Divide mix into 8 small plastic bags (about 1/2 cup each). Place mix into a corner of each bag and tie it there with a twist tie.

Make glaze mix: in a medium bowl, combine confectioners sugar with powdered flavoring mix. Divide into 8 small plastic bags and close bag with a twist tie. Attach each glaze mix to the cake mix bags with a twist tie. Place one of each bag into each cup.

Assembly:

  1. Generously spray inside of cup with cooking spray.
  2. Empty contents of cake mix packet in cup.
  3. Add 1 egg, 1 tablespoon of oil, 1 tablespoon water to dry mix.
  4. Mix 15 seconds, carefully mixing in all dry mix.
  5. Microwave on full power for 2 minutes.
  6. While cake is cooking, place ingredients from Glaze mix into a very small container and add 1 1/2 teaspoon water. Mix well.
  7. When cake is done, pour glaze over cake in cup. Enjoy while warm.

Makes 8 servings

5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour 
4 tablespoons sugar 
2 tablespoons cocoa 
1 egg 
3 tablespoons milk 
3 tablespoons oil 
3 tablespoons chocolate chips (optional) 
A small splash of vanilla extract 
1 large coffee mug (MicroSafe)

Add dry ingredients to mug and mix well. 

Add the egg and mix thoroughly. 
Pour in the milk and oil and mix well.. 
Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts. 
The cake will rise over the top of the mug, but don't be alarmed!

Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous). 
And why is this the most dangerous cake recipe in the world?
 
Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

MUG BROWNIE

Ingredients:
4 Tablespoons Flour
4 Tablespoons Sugar
2 Tablespoons Cocoa powder (Note: don't use cocoa mix or quik, it shouldn't have any sugar)
2 Tablepsoons Vegetable Oil (Don't use one with a strong flavor, eg olive, sesame, etc)
2 Tablespoons Water
Dash of salt
Mug
Microwave

Add sugar, flour, cocoa, and salt to the mug and mix.  Then add the water and oil and mix thoroughly (make sure you get all the dry mixed with the wet).  Microwave on high for about 1 minute.  You may have to do it a little longer or shorter depending on your microwave.  The brownie should still be wet in the center when done.  Let cool for a bit and enjoy!  (Add a scoop of ice cream for more yumminess).

Yellow Cake in Mug courtesy of Group Recipes

Ingredients

  • 6 tablespoons all-purpose flour
  • 4 tablespoons sugar
  • 1/8 teaspoon baking powder
  • 1 egg
  • 3 tablespoons water
  • 3 tablespoons oil
  • dash vanilla extract or lemon extract (or whatever flavor you would like)
  • 1 large coffee mug

Directions
  1. Add the dry ingredients to the cup and stir together.
  2. Stir in the egg, water, oil and extract of choice.
  3. Microwave for 3 minutes (1000 watts).
  4. The cake should rise to the top of the mug.
  5. Allow to cool a little and turn out onto a plate.
  6. This would actually serve 2-4 easily, but if you want to indulge and eat it all, I won't tell.

Peach Cobbler in a mug & microwave recipe:

  • 2 tbsp granulate sugar
  • 2 tbsp flour
  • 1 tbsp instant nonfat dry milk
  • 1/8 tsp baking powder
  • 1/8 tsp cinnamon
  • dash of salt

Blend all dry ingredients & put store in a plastic bag (if being used as a gift or used at a later date)

Additional Ingredients:

  • 1 (4oz) snack size container of diced peaches (well drained)
  • 1 tbsp butter or margerine
  • 2 tbsp water

Preparation:

  1. Melt 1 tbsp butter or margerine in a mug until melted. (Approximately 20 seconds on high power.)
  2. Add dry ingredients and 2 tbsp water to mug, and stir with a fork until well blended.
  3. Place well drained peaches on top of batter--do not stir!
  4. Microwave for 2 minutes on 70% power.
  5. Let sit in microwave for 2 minutes.
  6. Allow peach cobbler to sit and cool until cool enough to consume.

  4. Microwave on 60% power for 2 minutes. Let stand in microwave 2 minutes.
  5. Remove and let stand until cool enough to eat.

Chocolate Mint Brownie Mix
Substitute 2 tablespoons of mint chocolate chips for the semi-sweet chocolate chips in the Chocolate Brownie Mix recipe. Prepare as directed for Chocolate Brownie Mix.

Chocolate Cherry Brownie Mix
Substitute 1 tablespoon of finely chopped dried cherries for the chopped pecans in the Chocolate Brownie Mix recipe. Prepare as directed for Chocolate Brownie Mix. (Optional: Let batter stand 5 minutes before cooking to partially rehydrate fruit if desired.)

Apple Crisp

1/2 cup ouick cooking oatmeal or 1 pkg. of any flavor instant oatmeal
2 tablespoon margarine or butter melted,
2 tablespoon brown sugar,
dash of any kind of dessert spices (cinnamon, nutmeg,etc.)
1 peeled and cored medium apple.

  1. Put the sliced apples into a microwaveable small bowl.
  2. Mix the other ingredients and sprinkle over the apple slices.
  3. Microwave for 2 minutes.
  4. Let it cool for a few minutes.

Yellow Cake Mix
1/4 cup flour
3 tbsp granulated sugar
1 tbsp instant non fat dry milk
1 tsp egg white powder
1/4 tsp baking soda
1/8 tsp vanilla powder or vanilla extract (optional)
dash of salt

Blend all ingredients.

Chocolate Buttercream Frosting:
1/3 cup powdered sugar
1.5 tsp unsweetened cocoa powder
1 tsp instant nonfat dry milk

Method:

  1. Microwave 1.5 tbsp butter or margarine in a mug until melted.
  2. Add cake mix and 3 tbsp water to mug.
  3. Blend with fork.
  4. Microwave on 60% power for 2 minutes.
  5. Let stand in microwave for several minutes until cool enough to frost.


Frosting:

  1. Add 1 tsp butter or margarine and 1 tsp water to frosting mix in a zipper-like bag.
  2. Kneed frosting in bag until smooth. (Add additional tsp water if frosting is too dry.)
  3. Squeeze frosting to one corner of bag, use scissors to clip corner, and "drizzle" over cake.


(Alternately, you can mix dry frosting mix, 1 tsp butter or margarine and 1 tsp water in a bowl, blend, and spread over cake.)

Carrot Cake

1/4 cup flour
3 tbsp granulated sugar

1 tsp egg white powder
1/4 tsp baking powder
1/4 tsp cinnamon
1/8 tsp vanilla powder or vanilla extract (optional)
dash of ground nutmeg
dash of salt

Blend ingredients together.

Additional ingredients:
1 (2.5 oz) jar of strained carrots (baby food)

Vanilla Buttercream Frosting:
1/3 cup powdered sugar
1 tsp instant nonfat dry milk
1/8 tsp vanilla powder or vanilla extract (optional)

Method:

  1. Microwave 1.5 tbsp butter or margarine in mug to melt.
  2. Add 2 tbsp carrot to mug.

  4. Stir with a fork until well blended.

1 tsp egg white powder
1/8 tsp baking powder
1/8 tsp vanilla powder or vanilla extract (optional)
1/8 tsp ground cinnamon
dash of salt

Blend ingredients well.

Method:

  1. Microwave 1.5 tbsp butter or margarine in a mug until melted.
  2. Add cake mix and 1.5 tbsp water to mug.
  3. Blend with fork.
  4. Microwave on 60% power for 2 minutes.
  5. Let stand in microwave for several minutes until cool.

  5. Let stand and rest in microwave for 2 minutes, or until cool enough to eat.

Microwavable Doodh Peda

Ingredients:

2/3 cup milk powder
1/4 cup butter
1 tin condensed milk
cardamom powder
pistachios/slivered almonds for garnish
A few saffron strands(optional)

Method:

In a microwave safe bowl, melt the butter for 30 seconds. Add the milk powder and condensed milk and mix well. Microwave uncovered for 2 mins. Stir well, microwave again for another 2 mins. Stir once more, microwave in 1 min interval until you see the mixture thicken. It should have a crumbled texture but not browned at the bottom. Add the cardamom powder and allow the mixture to cool for atleast 30 mins. Make small balls, flatten it with the palm of your hand. Decorate using a fork/toothpick. Garnish with chopped pistachios.

Note: The above time is based on a 900W power. Mine took about 6 mins(2+2+1+1 min intervals). Use a deep microwaveable bowl so it doesnt overflow. After 4 mins, check every minute to make sure it doesnt burn. I used a flower shaped cookie cutter to get this pattern. I bought the mawa/milk powder from the indian store. But you can try the Carnation whole milk powder which is just as good.

Crockpot Chocolate Cake

1 package chocolate cake mix
1 container of sour cream (8 oz)
1 cup chocolate chips
1 cup water
4 eggs
3/4 cup vegetable oil
1 package instant chocolate pudding mix
Spray crock pot with nonstick cooking spray. Mix cake mix, sour cream, chocolate chips, water, egss, oil and pudding mix in a bowl by hand. Pour into crock pot. Cover and cook on low 6-8 hours or high 3-4 hours. Makes about 12 servings.

 

7 up Crock Pot Cake

This is a super easy version of the 7up cake recipe that was so popular years ago.

1 box French vanilla cake mix
1 12oz can 7 up or other lemon lime soda

Spray crock pot with butter flavored nonstick spray. Combine cake mix and soda, pour into crock pot. Don’t peek inside the pot until minimum cooking time has passed. Cook on low 2-3 hours or until a toothpick inserted in mi ddle, comes out clean.

Microwaved Crème Brûlée

INGREDIENTS

  • 1 1/2 cups heavy cream
  • 3 large egg yolks
  • 1/4 cup granulated sugar, plus 5 tablespoons for topping
  • 1 teaspoon vanilla extract
  • Hot water
INSTRUCTIONS
  1. In a large microwaveable mixing bowl, microwave cream uncovered for 3 minutes. Meanwhile, whisk together egg yolks, 1/4 cup sugar, and vanilla extract in a separate large mixing bowl until well combined.
  2. Whisking constantly, pour heated cream in a thin stream down the side of the bowl of egg mixture. Once combined, divide custard among four 1/2-cup ramekins (or any ovenproof or microwaveable container, like a mug).
  3. Place custards in a shallow microwaveable dish, making sure they don’t touch one another. Pour hot water between the ramekins until it reaches two-thirds of the way up the sides. Microwave until center of custards is just set, about 3 to 5 minutes. Remove from the microwave and let completely cool in the water. When cool, refrigerate covered for at least 1 hour.
  4. Once custards have rested, heat toaster oven to broil and, once heated, sprinkle about 4 teaspoons sugar on each custard. Place custards under broiler for about 5 minutes, or until the tops are caramelized and golden brown; watch carefully to avoid burning. Remove from oven and serve. (Alternatively, heat a conventional oven to high broil and arrange the rack in the upper third of the oven. Once the broiler is heated, sprinkle sugar on each custard and place under the broiler until tops are caramelized and golden brown, about 2 minutes; watch carefully to avoid burning.)

Ricotta Crèmes: (each recipe serves 1)

Vanilla:

1/2 cup part-skim ricotta
1/4 tsp vanilla extract
1 package sugar substituteMix all ingredients. Serve chilled.

Lemon Zest:

1/2 cup part-skim ricotta
1/4 tsp grated lemon zest
1/4 tsp vanilla extract
1 package sugar substitute (ie, Splenda, Sweet & Low, Equal)

Mix all ingredients in a dessert bowl. Serve chilled.

Lime Zest:

1/2 cup part-skim ricotta 1/4 tsp grated lime zest 1/4 tsp vanilla extract 1 package sugar substitute (ie, Splenda, Sweet & Low, Equal)

Mix all ingredients in a dessert bowl. Serve chilled.



Almond:

1/2 cup part-skim ricotta
1/4 tsp almond extract
1 tsp slivered toasted almonds
1 package sugar substitute (ie, Splenda, Sweet & Low, Equal) Mix all ingredients in a dessert bowl. Serve chilled.
 

Mocha Ricotta Crème:

1/2 cup part-skim ricotta 1/2 tsp unsweetend cocoa powder 1/4 tsp vanilla extract
1 package sugar substitute (ie, Splenda, Sweet & Low, Equal)
Dash espresso powder
5 mini chocolate chips

Mix ricotta, cocoa powder, vanilla extract, and sugar substitute in a bowl. Serve chilled with a dusting of espresso powder and sprinkled with chocolate chips.
