Is there any way to tell the number of copies that are listed/posted  for a particular book?

Add the book to your reminder list.  Then when you view your RL, you can see how many copies are available.

There should be an easier way, the sister site DVDswap is able to do this without the added step, why not here?

There are many times more titles of books and ISBN's than there are of DVD's.  DVD's are a relatively new media entrant and books have been around for centuries.  Sometimes I think there must be enough books so that every person on earth could have written one (existing title) and there'd still be more left over.  So with such a huge data-base - I'm thinking it's a big programming (and maybe server) problem than DVD's.
