Ohio Buckeyes (no bake)

Ingredients
  • 1 lb. - margarine, melted
  • 1 cup - crunchy peanut butter
  • 1 cup - coconut
  • 1 pound - graham cracker crumbs
  • 1 1/2 pounds - powdered sugar
  • 12 ounce - package chocolate chips
  • 1 cake - paraffin wax
Directions

In a large bowl, combine crunchy peanut butter, melted margarine, coconut, graham cracker crumbs, and powdered sugar.  Mix ingredients well and shape into 1 inch balls.

Melt 1 cake of paraffin wax in the top of a double boiler.  Add one 12-ounce package of chocolate chips, and stir gently until melted together.  Keep the water hot under the chocolate, but don't let the chocolate boil.  Using a toothpick, dip the cookies in the melted chocolate.  Place the cookies on wax paper to harden, about one hour.


Notes

This is a great no-bake recipe.  It's fast and easy, and the kids can do it with supervision of the cooking part.  You can sprinkle these with jimmies before they cool (sprinkles for those of you not from Ohio).  I got this recipe from my Grandma who lived her whole life in East Liverpool, Ohio, a small town on the Ohio River.  She taught me the love of reading and shared her treasured Agatha Christie books with me.  This recipe always reminds me of her.  She is greatly missed.
