No Peek Beef

20 ounces - club soda — about 2 soup cansful or enough to cover
2 cans - cream of mushroom soup
1 medium-sized - onion, coarsely chopped OR whole, peeled boiling onions
3 pounds - beef — stew meat or pot roast
4 or 5 - carrots, peeled and cut into generous chunks
1 package - dry onion soup mix
Preheat oven to 325 degrees.
Spread meat in bottom of heavy casserole with a tight-fitting lid. Sprinkle soup mix over top. Spoon on soup (do not dilute). Pour club soda over all. Cover and bake for 2 1/2 hours.
DO NOT PEEK WHILE ROASTING!!! ...just in case you missed the title. ;>
Super easy and really very tasty. The meat will be very tender and the gravy makes itself in the roasting.
• Frozen peas can be added and stirred in to warm at the last minute to keep their color if you're doing the stew meat version.
• If you're doing the pot roast version, no browning is necessary.
