Ingredients
  • 3 1/2 Cups - Flour
  • 2 Tsp. - Baking Soda
  • 1/2 Tsp. - Baking Powder
  • 1 1/2 Tsp. - Salt
  • 1 Tsp. - Cinnamon
  • 1 Tsp. - Pumpkin Pie Spice
  • 1 16 oz can - Pumpkin Puree (Not Pumpkin Pie Mix)
  • 2/3 Cup - Water
  • 2/3 Cup - Soft Shortening
  • 2 2/3 Cup - Sugar
  • 2 Large - Eggs
Directions
Pumpkin Tea Bread
 
 Dry Ingredients:

3 1/2 C. Flour
2 Tsp. Baking Soda
1/2 Tsp. Baking Powder
1 1/2 Tsp. Salt
1 Tsp. Cinnamon
1 Tsp. Pumpkin Pie Spice

Place Dry ingredients into a small mixing bowl and wisk together. Reserve to add to wet ingredients.  Mix approximately 1/3 of the bowl at a time.

Combine one 16 oz can of pumpkin with 2/3 C. water and reserve.


Into a Large Mixing bowl add the following:

2/3 C. soft shortening
2 2/3 C. Sugar
2 Large Eggs

Cream together. Add Pumpkin and water to mixture then add dry ingredients.  Mix together and bake in 2 loaf pans at 350 for approximately 45 to 50 minutes or until done.
