I haven't made zuchinni bread in forever ... do I grate/shred the whole thing, green peel and all or do I cut that away and just grate/shred the insides?  LOL

I have always used the peel!  The first time I made it for my husband (who had never had zucchini bread)  he said  "This banana bread is great...but why are there all these green things in it."
