Ingredients
  • 1 box - Rice a Roni or Store Brand Boxed Rice - Chicken Flavor
  • 1 bag or can - Tyson (or store brand) boned chicken (already cooked and chunked)
  • 1 cup - frozen broccoli or your favorite frozen vegetable mix
  • 1/2 cup - Salsa (more or less to taste)
  • - Sour Cream
  • 1 cup - Mozzarella cheese (shredded)
Directions

Prepare the rice according to the directions on the box, sauteeing the rice first then adding water and seasoning packet.  When you add the water, also add the chicken (drained if there is liquid in it) salsa and the frozen broccoli.  Finish the rice as directed by bringing to a boil and then simmering for the time recommended on the box.    It will be more liquid than just regular rice.  When it's finished, sprinkle with the mozzarella and put the lid back on for a minute to melt the cheese.  Serve over tortilla chips with more salsa and sour cream.

You can also make this with cooked chicken on the bone, or partially cooked, so that it will finish cooking with the dish in 15 minutes.  Just add the chicken when you add the water.


Notes

We love this when we can't afford to go to the mexican restaurant here in town.  I always make sure that I have the stuff on hand.  My version costs about $5 for a whole family, compared to $8 per serving at the restaurant!
