1 - onion
1 - can of cream of mushroom soup
1 - can of rotel
1 - whole chicken
1 pound - Velvetta
1 - pack of fettuccini noodles
Boil the chicken, save the water to use for the fettuccini noodles. If you prefer using seafood skip this step (I've been successful with crawfish and shrimp and crab). Just make sure your meat is precooked.
Boil the fettuccini noodles according to the package. Set aside.
Melt the stick of butter. Add the onion and bell pepper, cook until the onion is clear.
Add the cream of mushroom soup, rotel and Velvetta. Heat on low until the cheese is melted. Add the meat and cook until everything is hot. If you find the sauce too thick add a little milk. Add the fettuccini, stir well. Once everything is blended and hot you are ready to serve!
This freezes really well. I like to freeze single servings in small containers and bring it for lunch!
