1/8 teaspoon - Oregano
6 pimento stuffed olives - Cut them in half

Slight dash - Fresh ground pepper
Place snapper fillets in 13X9X2 inch pan. Prick fork marks in fillets. Sprinkle with Lime juice.. Cover and refrigerate 2 hours. Preheat over to 350 degrees.
In a large saucepan saute the onion and garlic in olive oil till they are soft. Add picante sauce, tomato sauce, bay leaf, oregano, olives and capers *if desired* jalapenos and slight dash of fresh ground pepper. Cook and stir over medium heat until slightly reduced (10 minutes).
Pour sauce over fish fillets. Coat well. Bake at 350 *degrees for 30 minutes turning only once (15 minutes).
Serve with Chili corn bread and Mashed potatos. Fresh Apple slices add wonder and taste to the meal!
*This is a very old recipe shared from a newspaper clipping* Wonderful meal for even non-fish lovers!
