Ingredients
  • 2 1/2 cups - cubed fresh rhubarb
  • 3/4 cup - milk
  • 1 tsp - cinnamon
  • 1/4 tsp - ground nutmeg (fresh or powdered)
  • 1 1 cup - sugar
  • 2 - eggs
  • 1/2 cup - bisquick
  • 2 Tbsp - margerine
  • 1/4 cup - coarsly chopped walnuts or pecans
  • 1/4 cup - brown sugar
  • 2 Tbsp - firm margerine
  • 1.2 cup - Bisquick
Directions

Grease a deep dish 9" pie plate or square brownie type pan

Preheat oven to 375 degrees

 

Place chopped rhubarb in bottom of prepared baking dish. Combine milk, cinnamon, nutmeg, 1 cup of sugar, 1/2 cup Bisquick and 2 Tbsp margerine. Beat well and pour over rhubarb.

Topping:  Combine last four ingredients and mix with a fork or pastry blender. Crumble of rhubarb mixture in dish.

Bake at 375 for approx. 40 minutes or until crumb topping looks set.

 


Notes

It's Rhubarb time and this receipe is easy to assemble for a quick treat. Serve it with ice cream or Cool Whip if desired. I also use this topping with any pie filling that I prepare such as blueberry or peach combined with 3/4 cup sugar and 1/4 cup tapioca as a thickener. Can also be layered in parfait glasses with whipped cream every other layer...........
