Satay Chicken Salad

Dish: Salads
Dish Type: Poultry
Cooking Method: Poached
Diet: Healthy
Difficulty: 2 / 10
Servings: 4
Prep Time: 20 min
Cook Time: 20 min

Ingredients
Directions
fabulous Oriental Chicken With Peanut Sauce

1 1/2 TBL    Creamy (I use crunchy) Peanut Butter

2 1/2 TBL     Salad Oil

Mix until well blended

Stir into Peanut/Oil mixture:

2    TBL    Soy sauce

2    TBL    Sugar

2     tsp    Rice Wine (you can use white) Vinegar

1/2  tsp    Oriental Sesame Oil

1/4-1/2 tsp Ground Red Pepper (Cayenne)

Optional garnishes:  (I use)
2     TBL    chopped fresh coriander

2    TBL    chopped green onion

1    tsp     grated or chopped, fresh garlic

2   tbls     chopped peanuts

Pour sauce over shredded/sliced, poached chicken or shredded market chicken which should sit over shredded lettuce (or napa cabbage).  Top with chopped peanuts.   Consider doubling the sauce recipe.                 Enjoy

Notes

I double the sauce recipe (twice) -basically a quadruple recipe - it's that good.  This sauce can be used over a plain green salad and you won't be disappointed.  Get creative and garnish with whatever you like: bean sprouts, canned "Chinese" fried noodles, toasted seasame seeds,

This dish is always well-received and requested at every family potluck.  I'm getting hungry just thinking about it!
