Speedy Chicken Enchiladas

Ingredients
  • 1 4 oz - Can or Diced Green Chiles
  • 1 10 oz - Can of Chicken - drained ( if you have leftover baked chicken - 1 cup chopped work well also)
  • 1 4 oz - Carton Sour Cream
  • 1 Cup - Grated Cheese ( I use Colby Jack, but any yellow cheese will do)
  • 16 6-inch - Corn Tortillas
  • 1/4 cup - water
  • 1 26 oz - Cream of Chicken Soup (Large family size can)
Directions

In a medium saucepan mix together soup, chilies, water, and chicken.  Heat until bubbly.  Remove from heat and add sour cream.  In a 9x13 baking dish layer corn tortillas, soup mixture, cheese and repeat ending with soup mixture.  Bake uncovered for 15 to 20 minutes or until hot.  Before serving add cheese to the top. 


Notes

Serve this dish with you favorite side dish or refried beans and rice along with a salad.  This is a great weeknight dinner when you really don't feel like a lot of work.  Hope your family enjoy it as much as mine.   Happy Reading.
