Super easy, super good.
Just get a box of cous cous, prepare as directed the number of servings you want
to top the cous cous, I sautee whatever veggies I have in the house with a tbl of olive oil. When they are tender I add 1 can of no salt added diced tomatoes.
Use mushrooms instead of meat and it's still hearty enough for dinner.
The veggies I use: shitake or portabello mushrooms, kale, watercress, minced garlic, canned tomatoes
