I'm sorry I don't have a copy on my bookshelf, but this would be my choice.  And I've buddied you a credit so you can go ahead and order the book for the baby regardless of other deals you might get.  Be sure to order a hardback copy as I think it will become a keepsake for your niece's baby.  At least I think it's that good a book.

I have lots of favorite christmas stories.  I have 10 on my shelf 8 of which were favorites.  I am doing 5 for 3 , 8 for 4 or 15 for 5 on all of my books.

One of my all time favorite books for when they are older is One wintery night by Ruth Graham. We read this several years in a row.Not on my shelf though

Another one that we loved was the 12 days of Christmas. We loved signing to it and seeing if we could turn the pages fast enough to sing it.

I just sent out another one Donkey's Christmas

Unfortunately I don't have either of these on my shelf, as they are both WL.  But my very favorite Christmas book growing up was Jingle Bugs by  David A. Carter.  One of my favorite books now just because I love the illustrations so much is Holly Claus The Christmas Princess by Brittney Ryan.  Also anything by Jan Brett is wonderful too.  She's got great illustrations, with lots of "hidden" things going on in the background.  I loved looking at those as a kid.

Edited to fix formating

Every year we read the Sweet Smell of Chrismas, and I've always loved it.  It's a nice story with scratch and sniff stickers.  I'm in my late 30's now, and the scents from the stickers are just barely there.   When the kids get a little older, I'd recommend The Best Christmas Pageant Ever by Barbara Robinson, my favorite Christmas book.  They made a movie of it in the late 80's or early 90's, and it's great too.  (I'm glad someone said Mr Willowby's Christmas Tree - that's a really good one!)
