How can you tell what your current wish list settings are?  I can see how to change them, but can't see what they are currently set at.  I know, it's probably something obvious that I'm missing.

What do you mean by WL settings?  If you want to autorequest or hold WL books you just go to your WL, check the box by the book(s) and hit the appropriate button at the top.

I have set all books on the wish list to be sent with 48 hour notice and to all be off hold.  But... let's say in a week I forget what my settings were.  There seems no way to tell by just looking at the wish list page.

The background will be pink if the book is on hold (plus it will say it's on hold), green if it's on autorequest (plus it will say it's on autorequest) and white if they're not on hold and not on autorequest.
