I guess my finger slipped and I said that I would mail out a book by Friday.  But I can't.  I meant to say Saturday because Saturday is my only day I can get to the post office.  I can't see any way to change the date.  What do I do?

You have two days after the date you chose to mark the book mailed, so you actually have until Sunday night. Mailing on Saturday is fine. You'll get some naggy emails from PBS if you don't click Book Has Been Mailed by Friday, but that's all that'll happen.

You can also mark a book mailed before you mail it as long as you mail within 48hrs of marking it mailed. Although that's not supposed to be how you regularly do it.  But it's acceptable when things come up.  Like accidentally choosing the wrong date.

I wrap all my books on Saturday night, mark them mailed, and then mail on Sunday. It's not a big deal.

No worries Ray, you have a 48 hour window to mail.  If a problem arises, just pm the receiver and let them know what happened.  So long as it's only a few days, that is all that's required.  A delay of over a week (or two?) the guidelines mention requesting permission from requester.
