Black Bean Corn Saute

  • 1 tablespoon - vegetable oil
  • 1/2 cup - chopped red pepper
  • 1 can (16 oz.) - whole kernel corn, drained
  • 2 - green onions, sliced
  • 1 teaspoon - cilantro leaves
  • 1/8 teaspoon - ground red pepper
  • 1 can (15 oz.) - black beans, drained and rinsed

Heat oil in medium-size skillet. Add red pepper and saute over medium-high heat for 1 minutes. Add corn, green onions, cilantro, and ground red pepper. Saute 1 minute. Add black beans and cook until heated through. Makes 6 (1/2 cup) servings.
