Carbonnade Flamande
Marinate over night or longer:
Beef brisket with balsamic vinegar, pepper and worcheshire sauce
Pat dry and coat in flour
Saute lightly in bacon fat
brown the floured meat and ¼ cup thinly sliced onion
drain off any excess fat. Combine and bring to a boil:
1 bottle beer
1 clove garlic, chopped
½ tsp sugar
½ tsp salt
Add to taste
cilantro
thyme
horse radish
Pour over meat and the onions. Cover and simmer 2-21/2 hours
After straining sauce you may add:
½ tsp vinegar
Use sauce as gravy.
Add small potatoes and carrots last 45 minutes of cooking.
