Chicken Alluette

  • 4 - boneless skinless chicken breasts
  • 1/3 cup - flour
  • - salt & pepper
  • 1 stick - butter
  • 1/2 bottle - champagne
  • - crushed tarragon leaves

Flour, salt, and pepper chicken.  Brown in butter in skillet.  Place in 9x13 baking dish.  Cover with champagne and sprinkle lightly with tarragon.  Bake for 1 hour at 350 degrees fehrenheit or until most of the champagne has cooked away.  Serve with rice.  Especially good with chicken flavored Rice-A-Roni.

I usually pour the whole bottle of champagne in since I don't drink it and prefer more gravy.
