Ingredients
  • 15 oz can 1 - Black Beans
  • 1-2 - Avocado, diced
  • 1 bunch - Scallions, sliced
  • 2-3 - Tomatoes, diced
  • 15 oz can 1 - Corn Kernels
  • 3/4 C - Vegetable Oil, Olive Oil, Safflower Oil in any combination
  • 1/4 C - Red Wine Vinegar
  • to taste - Garlic, fresh, powered or minced
  • to taste - Salt & Pepper
Directions

Combine all prepared vegetables in a bowl.  To make vinagrette, mix the oil (in any combination to make 3/4 C), red wine vinegar, garlic, salt and pepper in a jar and shake to mix, or whisk together in a bowl.  Pour dressing over vegetables and stir gently to combine.  This recipe will make 1 C of vinagrette which is more than enough, and will be sufficient for a doubling of this side dish.  Add or subtract to the quantities of  the listed vegetables to suit your own tastes and preferences. 


Notes

This is a terrific warm-weather salad or side dish and travels well.  Perfect for picnics or barbeques.
